Native oysters and crab bao buns: Fish Game restaurant opens in Canary Wharf

The owners of the much-loved restaurant group Macellaio RC, have today opened Fish Game in Canary Wharf.

Fish Game serves ultra-seasonal dishes using sustainable British ingredients, focused on the best game and fish from across the UK.

Diners can expect to see the likes of rabbit croquettes with marjoram mayonnaise and lemon zest, native oysters and crab, and pork bao buns topped with curry sauce on the menu.

Roberto Costa, owner and founder of Macellaio RC said: “My priority is to enhance the flavour of our products using just a few great ingredients rather than lose them with a busy plate.”

Working alongside Head Chef Matthew Colk, Costa has spent the last six months creating something unique for guests.

He believes that the hard work will pay off into something “truly stunning.”

Costa added: “We collaborate with Windsor Park for most of our game meat.

“We buy the mutton in Swaledale Yorkshire and we pick them in between four and six years old because we believe that is when the meat is tastiest.

“Our langoustine comes from Isle of Skye in Dublin Bay and we use Cornish Monkfish.”

Alongside the restaurant will be a tequila bar, where Samuele Lombardi, the head bartender will serve classic cocktails with a twist.

In collaboration with El Camion tequila, the bar will serve a selection of different tequilas and Mezcal.
